The Altitude and Landscaping in the Central Highlands presents unique challenges in particular the harvesting on un-even terrain. It prevents mechanical mass extraction methods from being used.  They need to rely on selective hand-picking to get the best beans to maintain quality while reducing the impact on plants and the environment.
