FARM & PHIN
We choose to visit Elon Farm in the South Central Highland province of Lâm Đồng an hour south from the regional capital of Da Lat. It is a prime coffee growing region due the mineral rich soil combined with the Altitude and Topical Climate. The stay at Elon Farm was in their Farm House. A unique and beautifully designed space that brings the outside in through open walls, rich natural / local materials and high ceilings. It acts as a home for the young family of 3, a hub for their coffee business and a guest-house for visitors to their homestay / helpers on their farm.
Being a Coffee Plantation, one of the highlights is the large marble Coffee Bar they use to host home-stays / workshops, do tastings of their coffee and work with their business partners.
Phin Ritual
Jenny, the co-founder of Elon Farm introduced us to Robusta, the primary coffee bean the family produces and the traditional Vietnamese Phin Filter to enjoy it with that we will be using it in our initial tasting session.
The Phin brews compressed ground beans through a perforated metal plate leading to a concentrated / bold taste more similar to an espresso then a filter coffee. The slow nature allows for a higher flavour concentration and more oils to pass through versus a paper filter method.
